Adda Dosa Recipe

                                         Adda dosa is a switch from regular breakfast routine. It’s a healthier and tastier switch from the regular breakfast cuisine. The tasty dosa is a rich source of protein made from rice and lentils. The pancake is rich in taste especially in its crispiest form. The cuisine is loved by the kids as well as the adults, when it comes to a variety taste; this unconventional pancake style stands first.

Preparation time :-4 to 6 hours

Cooking time:- 5-10 minutes

INGREDIENTS

To soak:

Sona masuri rice / dosa rice1 Cup
Toor dal¼ Cup
Black gram2 tbsp
Green gram2 tbsp
Fenugreek seeds¼ tsp
Dried kashmiri red chilli5 Nos

Other ingredients:

Onion, finely chopped2 tbsp
Coriander, finely chopped2 tbsp
Ginger garlic paste½ tsp
Cumin/jeera1 tsp
asafoetidaA pinch
Salt1 tsp
oilfor roasting

PREPARATION

  1. Firstly, soak all the ingredients listed under “to soak” for 5 hours.
  2. Blend to slightly coarse paste adding water as required.
  3. Transfer the batter into large mixing bowl.
  4. Add in 2 tbsp onion, 2 tbsp coriander, 1 tbsp leaves and ½ tsp ginger paste.
  5. Also add 1 tsp cumin, pinch of asafoetida and 1 tsp salt.
  6. Mix well making sure everything is combined well.
  7. Check for thick flowing consistency, add more water if required.
  8. Further, pour a ladleful of batter onto a hot tawa and spread gently.
  9. Pour a tsp of oil over adai.

  2. Now flip the adai and cook both sides by pressing gently
  3. Finally, fold the adai dosa and serve with green chutney or coconut chutney.

Onion Chutney Recipe

                                           Onion chutney is a delicious side sauce for many breakfast dishes. The simple to make chutney is a blend of spices and onions. The onion in the chutney adds the sweet aroma and gives a different taste to it. The onion brings in the tangy taste to balance the seasonings in every dish. The onion chutney is a very easy to make and delicious combination especially with adda dosa.

Preparation time :-5 minutes

Cooking time:- 10 minutes

INGREDIENTS

  1. 2 tsp oil 
  2. 1 tsp urad dal
  3. 1 tsp chana dal 
  4. 4 dried kashmiri red chilli 
  5. 1 onion, finely chopped small piece 
  6. tamarind ½ tsp jaggery 
  7. salt to taste
  8. ¼ cup water, or as required
  9. 2 tsp oil 1 tsp 
  10. mustard seeds 1 tsp
  11. urad dal pinch of hing / asafoetida 
  12. 1 dried red chilli
  13. broken few curry leaves

INSTRUCTIONS

  1. Firstly, add 2 tsp of oil and roast 1 tsp urad dal, 1 tsp chana dal and 4 dried kashmiri red chilli on low flame.
  2. Also add in 1 finely chopped onion.
  3. Sauté the onions till they turn slightly golden in colour.
  4. Cool completely and transfer to the blender.
  5. Add in small piece tamarind, jaggery and salt to taste.
  6. Blend to smooth consistency adding ¼ cup water, or as required.
  7. Now prepare the tempering by heating 2 tsp oil.
  8. Also add in 1 tsp mustard seeds, 1 tsp urad dal, pinch of asaphetoda, 1 dried red chilli and few curry leaves.
  1. Finally, pour the tempering over onion chutney and serve along with idli or dosa.
