Punjab in India is a place of pure, rich and yummy food with generous amount of curd and ghee for both veg and non-veg foodies. There are numerous Punjabi food items that would make us go crazy. It is a spectacular area for perfect food, especially for food hunters. Those “tadka khaana” are blessings to our tastebuds and heart. Every food has its own unique taste, flavour, colour, aroma and whatnot. The only thing in common about these is that it leaves us fulfilled with a flavoured tongue and shamelessly licking fingers. After a huge platter of this perfect heaven, leave the doorway open only for sipping down the cold perfect Lassi.

Lassi is the fairy drink of Punjab’s cuisine. It’s like an elixir for the tummies, a companion to yummy delicious flavoursome food, and mostly a mandatory drink in summer. The thick curd churned with sugar and served chilled with flavours like saffron/kesar, mango, mint, strawberry, and plain is astoundingly delicious. There are varieties of lassis and if you want to experience the authentic ones, Punjab or Punjabi restaurants or ‘dhabas’ be the destination. The brim filled lassi, reaches our hearts through every gulp, forming foamy moustaches which makes the thrill complete

If couldn’t try one yet or want to have one right now, it’s pretty simple. Punjab won’t come to us and we can’t always run towards there for lassi, so why not beat the heat or cravings from our kitchens? Some milk, curd, and ice are all what we got and what we need. So let’s do it!!!

INGREDIENTS

 

MILK (SLIGHTLY WARM)2 CUPS
CURD2 TEASPOONS
SAFFRON / KESAR4 or 5 STRANDS 
WATER/MILK1 TABLESPOON
SUGAR (POWDERED)3 TABLESPOONS
CARDOMOM POWDER¼ TEASPOON
ICE CUBES6 CUBES
ALMOND & PISTAS CRUSHED/CHOPPEDFOR GARNISHING

HOW TO MAKE SAFFRON LASSI

  • TO PREPARE FRESH CURD: Add the curd to the milk and beat it lightly so that the lumps are broken. Close it and keep it aside for 5 hours at room temperature. Cool it in the refrigerator.
    *(YOGURT can also be used)*
  • The saffron must be soaked for around 15mins in one tablespoon of water or milk.
  • In a blender, add the chilled curd, soaked saffron water, sugar and cardamom powder.
  • Add the ice cubes and blend it for 2 minutes to get a smooth and thick lassi.
  • (Optional) Adjust the consistency with extra cream to make it thicker or with chilled water to make it thinner.
  • Pour the lassi into a glass and garnish it with the chopped nuts.

 

The sweet chilled lassi, will tingle the tastebuds and would de-stress yourself with an internal cool shower through its extreme richness.
