Valentine’s Day special combo

Semiya payasam is a south indian sweet milk dish prepared from semiya which is made of vermicelli , milk , ghee , sugar etc. This dessert is often served at marriages and holy functions around south india , the best combo for semiya payasam is a Boli , another south indian sweet dish prepared from dal and maida. 

Semiya Payasam

INGREDIENTS

 

milk

500 ml 

semiya(vermicelli),rosted

½ cup

sugar

½ cup

water

1 cup

cashew nuts,halved

3 tablespoons

raisins

3 tablespoons

cardamom powder (Elaichi)

¼ teaspoon

ghee

1 tablespoon

PREPARATION



  • Break vermicelli into small pieces

  • Take a saucepan ,add water, bring it to boil, add semiya once cooked properly until it’s soft 

  • Add 500ml of milk,sugar and cardamom powder and stir until mixed well and sugar is dissolved 

  • Keep stirring

  • Keep the flame low and let it boil until the flavours are absorbed well and it has thick and creamy consistency 

  • Now roast the cashews in a small pan until it golden brown , add raisins and keep it aside

  • Now garnish the semiya payasam and have it cold or hot according to your preference.

Preparation time: 50-60 minutes
Serves :6-8

INGREDIENTS

For covering

 

Maida

¾ cup

Yellow food colour

few drops

Salt

a pinch

Water

as needed

For Dal filling

 

Kadala parippu /Channa dal

1 cup

Sugar

¾ cup

Cardamom powder

¼ teaspoon

Yellow food colour

few drops

Vegetable oil

3 tablespoon

Rice flour

as needed for dusting

Ghee

as needed

PREPARATION

 Part 1 

  • Take maida ,add yellow food colour,salt and make a soft dough using water
  • Take a bowl, add 3 tablespoon of oil and soak the prepared dough and make sure it’s completely immersed.

 

Part 2

  • Take the channa and put in a pressure cooker with 3 cups of water in it and until dal is thoroughly cooked and drain the excess water
  • Take a pan add cooked dal,sugar and yellow food color cook till the sugar is melted
  • Stir until water is completely evaporated 
  • Then add cardamom powder and mix well
  • Once the mixture is cooled down mash the mixture thoroughly without any lumps and set aside

Part 3

  • Take a plate and rice flour and keep it aside
  • Make 12-15 medium sized balls with the dough
  • And then make make 12-15 marble sized from the dal mixture
  • Flatten each covering dough and keep the marble sized dal mixture in middle and completely cover using the dough
  • Flatten the balls keep it in rice flour and do the same process for all the rest of the balls
  • Take it out from rice flour and roll out in small circular shape like chapatis
  • Take a flat pan and keep it in medium heat brush ghee on both sides of the boli and flip sides until cooked thoroughly , don’t wait until it is brown.
  • Now serve with semiya payasam and just enjoy the tastiest combination ever.
